Let them eat cake!! Indeed. We need not only vegan cake but GREAT vegan cake. I remember walking through the Green Fields in Glastonbury 20 years ago. The guys walking in front of me were talking about vegan cake, wondering how on earth is it made?! I had to stop them and tell them about my chocolate cake recipe which you can see here. I also recommended that if they want to impress a potential romantic partner who is vegan just make them this cake and they will win them over. 

The ancient Egyptians were advanced bakers but it wasn’t until the Vikings created ‘kaka’ that the cake was truly born. It has been around for a very long time and, with the food culture of cakes being celebratory, we cannot live without them. 

Just like the Glasto guys many people are befuddled as to how to make a cake without butter, eggs and milk.

All of my recipes are, by default, also gluten free. On our Vegan Cooking Diploma and Vegan Chef Diploma we also give students the gluten-containing ingredients list. So everyone is catered for. 

With gluten free recipes my advice is just the same as my advice for vegan baking in the Porch article - “ . . . instead of trying to substitute these ingredients . . .” use a simple gluten free cake recipe.
