Ginger Ice Cream

Serves / makes - 1 portion


Ingredients

1 banana, chopped and frozen

1-3 teaspoons molasses, depending on your preference

A splash of plant milk (if the blender struggles)

A generous pinch of cinnamon and ginger

A few pieces of vegan white chocolate, chopped (optional)


Method

  1. Put all of the ingredients into a jug. Blend, with a hand blender, until smooth. The banana will be hard so you may have to push down, quite hard, with the blender. Only add a splash of milk if the blender really needs it. If you add too much you will end up with a smoothie rather than ice cream.

  2. Put the ice cream in a serving dish and top with roughly chopped white chocolate and a fresh grating of nutmeg.
