Gluten Free UK Pancakes
I was super psyched to be asked for pancake recipes from the British national paper, The Mirror. It's a very mainstream paper, when these publications ask for vegan recipes it reminds me how far veganism has come in recent times.
This is one of 2 recipes that were featured, this is a thin UK style pancake.
Dark chocolate sauce
3 tablespoons raw cacao powder or cocoa powder
3 tablespoons rice syrup
1 tablespoon water
Mix the cacao or cocoa and syrup with a spoon till smooth
Add the water, mix well and set aside
This chocolate sauce is very dark and bitter, if you want it sweeter and less bitter simply add more syrup. The sauce will lasts for a month in your fridge.
Makes 2 portions, 2 crepes for each person but that depends on the size of your pan (for more crepes just multiple the quantities by how many you want)
80g light powdery flour such as tapioca flour, potato starch or Doves gluten free white flour
80g gram flour
180ml plant milk
60ml water (possibly more)
1-2T sunflower oil
Heat a frying pan on a low heat whilst you make your batter
Put the flours and milk in a jug
Using a fork or whisk mix well, getting rid of any lumps by smushing the mixture against the side of the jug
Add a little of the water and mix. Keep adding water until the mixture is runny. You may need more than 60ml of water depending on a few factors that can affect flour.
Pour a small amount of oil into the pan, tilt the pan so the oil covers it
Pour the batter into the pan, again tilt the pan, so you get an even thin coating of batter
Fry for a few minutes on a medium heat, flip over, add a little more oil if needed and fry for another few minutes
Serve with the dark chocolate sauce, berries and vegan ice cream
My top tips for perfect pancakes
The first pancake, what I call the sacrificial pancake, is always a disaster. This is because the pan needs to be hot and evenly hot for a good pancake. So heat your pan for five minutes before you fry your first pancake.
If you’re making more than one pancake use multiple pans, cooking the pancakes at the same time. That was you and your family or friends can eat at the same time.
If you can’t use multiple pan have a warm plate covered with a tea towel ready. This does a good job of keeping your pancakes warm.
