Sunshine Noodles

Ingredients

1 courgette

1 carrots

2 handfuls pumpkin seeds

2 tablespoons extra virgin olive oil

2 tablespoons lemon juice

1/2 red pepper

2 cherry tomatoes


Equipment

Spiraliser or Thai peeler

Blender or food processor


Method

  1. Spiralise or grate the courgette and carrot. Put it into a mixing bowl.

  2. Blend the seeds, oil, juice, pepper, oregano and tomatoes to make the dressing. Add salt to taste.

  3. Pour the dressing onto the courgette and carrot. Mix well and serve immediately.
