Bunny Pancakes

This is such an easy Easter recipe that is great to make with the kids. The bunny shape of the pancakes is so cute and can be made with a variety of ingredients.

Ingredients

Makes 1 portion

40g gram flour

1T ground flax seed (sub flour and flax for 50g plain if not gf)

1T sugar

1/4t bicarbonate of soda

6T water 

Salt - optional 

Decoration 

Eyes - cream, banana, thick yoghurt 

Pupils - hazelnut, blueberries, choc chips

Nose - raspberry, blueberry, chocolate button

Ears - apple, banana

Whiskers and teeth - apple


Equipment

Mixing bowl

Mixing spoon

Frying pan, preferably non stick

Spatula

Cookie cutter or glass


Method

  1. Mix the flour, flax, sugar and bicarbonate of soda in a jug. Add half the water, whisk in then add the rest of the water and whisk again. Add salt. Set the batter aside to thicken whilst you heat a pan on a medium high heat.

  2. Add a little oil to a very small frying pan. Add a sixth of the batter, cook for a few minutes then flip over and cook the other side. Do this with the remaining batter so you end up with six small pancakes.

  3. Use two pancakes as the faces and cut two other pancakes in half. The remaining pancakes are there just in case you go wrong.

  4. Put the pancakes you are using as the faces on two plates. Cut out four rounds from the pancakes you cut in half, these are the bunny cheeks. Put a little cream or yoghurt around the edges of the cheeks. Add them to the plate.

  5. Make the eyes using some cream, yoghurt or 4 slices of banana. Add the pupils using hazelnuts, berries or chocolate chips.

  6. Make the nose using raspberries, large blueberries, blackberries or large chocolate buttons.

  7. Make the ears using banana or apple slices (cut in half then into moon shapes using a small jar).

  8. Make the whiskers using apple slices cut into matchsticks. Position them in the cheeks using a little bit of cream.
