Protein Choc Cookies

Just a handful of ingredients are needed to make these chocolate cookies. But be sure to use hemp protein powder as other types of protein powder may give very different results.

Serves / makes - 12-14 cookies


Ingredients

100g hemp protein powder

50g cocoa or cacao powder

100g sugar (we used coconut sugar)

50g oil (use a neutral oil, we used sunflower)

200ml water


Equipment

High sided bowl

Mixing spoon

Large baking tray

Baking paper


Method

  1. Set your oven to 170c/340f/gas mark 3.

  2. Add the protein powder, cacao or cocoa and sugar to a high sided bowl.

  3. Add the oil and half the water, mix well removing any lumps (i use a whisk to do this).

  4. Add the rest of the water and mix well.

  5. Spoon the mixture onto baking paper on a baking tray, putting 12-14 dollops of mixture on the tray with 4cm space between them.

  6. Bake for 30-40 mins. 30 minutes will give you a soft cookie, 40 mins will give you a crisp biscuit.


Notes

  • You can add decorations such as sugar stars or crushed nuts to the cookies before they are baked.

  • The cookies should be stored in a paper bag. If they are stored in a plastic box they may go soft.

  • These cookies freeze well.
