GF Yorkshire Puddings

The Holy Grail. Vegan AND gluten free Yorkshire puddings. Make sure the oil is very hot before adding the batter to the pan. This will ensure they rise.

Serves / makes - 6 Yorkshire puddings


Ingredients

100g potato starch or tapioca flour

60g gram flour

2T aquafaba (the water from a can of chickpeas)

1/4t salt

1t baking powder

1t bicarbonate of soda

2t apple cider vinegar

80ml sunflower oil

270ml plant milk

1T sunflower oil


Equipment

Bowl or jug

Whisk

6 hole muffin tin


Method

  1. Heat the oven to 230c/450f/GM8.

  2. Add all of the ingredients except the 1T oil to a bowl or jug. Mix well with a whisk, you can use a hand blender if there are lumps.

  3. Pour the 1T oil into the muffin pan, dividing between the 6 holes. Put the pan in the oven, on a high shelf. Heat for a few minutes until the oil is almost smoking.

  4. Divide the batter between the muffin holes. Bake for 15 minutes then lower the heat to 200c/390f/GM6 and bake for a further 20 minutes until golden.
