Banana Skin Bacon

Crispy and salty, this bacon recipe is such a great vegan substitute. And you reduce food waste at the same time.

Serves / makes - 3 pieces of banana bacon


Ingredients


1 medium sized banana skin

1/2T tamari or soya sauce

1T water (optional use 1/2T water and 1/2T liquid smoke for a strong smokey flavour)

1t syrup (maple is preferable but if you don’t have it use any light syrup)

A pinch of smoked paprika

Plus a little oil for frying

Method

  1. Tear the banana skin onto 3 strips. Scrape all of the banana pulp off the inside of the banana skins.

  2. Put the rest of the ingredients into a bowl with the skins. Submerge the skins in the marinade for a few minutes.

  3. Heat a frying pan on a medium to high heat, add a little oil.

  4. Pull the skins out of the marinade and put them into the pan.

  5. Fry them on both sides, adding the marinade, in parts. This will soak into the skins. Fry the skins until they start to bubble.

  6. Enjoy them in a full breakfast or in a BLT.
