Speculoos Stars

Ingredients
5T ground cinnamon
1t ground nutmeg
1t ground cloves
1/2t white pepper
1/2t ground coriander seed
1t ground ginger
1/2t ground cardamom
1/2t ground mace
200g oats
75g gram flour
5T coconut sugar
3T oil
3T plant milk
1T icing sugar

Method
Heat the oven to 180c/360f/GM4.
Mix all the spices together then put them into an airtight jar. There will be spice mix left over.
Blend the oats in a high speed blender; alternatively use pre ground oat flour.
Put the oats, gram flour, sugar and 2T spice mix into a bowl. Mix well.
Add the oil and plant milk, mix well. You will need to work the dough with your hands.
Put the dough between two sheets of baking paper. Use a rolling pin to make the dough very thin, around 4mm.
Use cutters to cut out shapes of dough. Place them on a baking tray covered with baking paper.
Bake for 8-10 minutes until they have browned.
Allow to cool then dust with icing sugar using a fine sieve.
